Nigeria’s pepper soup usually contains a variety of meats. Locals often use goat, but you can also use beef, chicken, mutton, oxtail, or fresh fish. This dish is served at bars, and locals often eat it accompanied by beer.

Goat Meat Pepper Soup

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Servings: 6

Ingredients:

  • 1 pound goat meat (with or without skin) cutlets

  • 2 tsp Uziza leaves (can be substituted with parsley, basil, or mint leaves)

  • 1 tsp red chilli flakes

  • 1 tsp ginger powder (can be substituted with fresh ginger)’

  • 2 tsp ground crayfish

  • Salt to taste

  • 1 onion (minced or grated)

  • 1 seasoning cube

  • 1 Scotch bonnet (de-seeded and minced)

  • 4 cups of water

  • 1 tbsp pepper soup spice

  • Habanero peppers (optional, depending on your spice tolerance)

Note: If a readymade pepper soup spice is not available, here is a simple recipe you can do to make one from scratch.

Pepper Soup Spice Ingredients: alligator pepper, selim pepper, calabash nutmeg.

Instruction:

  1. Roast calabash nutmeg in a dry pan for two minutes.

  2. In a mortar and pestle or coffee grinder, grind the roasted calabash nutmeg with the alligator and selim peppers until they turn to a fine powder.

  3. Mix well together and store in an airtight container.

    Instructions for cooking Nigerian Goat Pepper Soup:

  4. Cut your goat meat into cutlets. Rinse them thoroughly. Afterwards, transfer them into a pot. Add salt, seasoning cube, habanero peppers, and half of the onion. You can remove the seeds of the peppers to lessen the heat. Add four cups of water, then stir. Cook for 30 minutes.

  5. Add the pepper soup spice, red chilli flakes, ginger powder or fresh ginger, the remaining onion, and crayfish. Cook again for another 10 minutes.

  6. Add in the uziza leaves or it substitute. Let it simmer for five minutes under low heat. Add salt to taste.

Once cooked, serve it hot with yam, rice, bread, or another carbohydrate and enjoy!
